Fresh Garlic Scape Pesto



Garlic scapes, the flower stalks of hardneck garlic plants, have a delicious, fresh garlic flavor, slightly milder than traditional garlic.  They make terrific pesto.


FRESH GARLIC SCAPE PESTO

makes about 1 cup 

1 cup loosely packed basil leaves
1-3 garlic scapes (depending on how you feel about garlic) coarsely chopped
1/4 cup walnuts
1/4 cup olive oil
2 tablespoons grated parmesan cheese
salt to taste



Combine all ingredients except cheese and salt in a food processor or mortar and pestle.  Grind until you reach your preferred consistency.  Add cheese and salt to taste.  Toss with pasta or spread on a sandwich.
