Katie's Garlic Scape Pesto

Just when you thought we'd be done talking about garlic scapes -- another pesto!  This one is from our friend Katie, who runs the Wyck Home Farm, a wonderful historic urban farm in the Germantown neighborhood of Philadelphia.

makes about 1 cup
  • 1/4 cup pine nuts, walnuts or cashews
  • 3/4 cup coarsely chopped garlic scapes 
  • 1 ½ Tablespoons lemon juice
  • 1/2 teaspoon salt
  • a few generous grinds of black pepper
  • 1/2 cup extra virgin olive oil
  • 1/4 cup grated Parmigiano Reggiano cheese
Combine all ingredients in a food processor and process to desired texture.  Use as a pasta sauce, a sandwich spread, or a dip for veggies.
