Napa-Lime Slaw

This slaw comes together in minutes, and will serve a crowd.  It's equally delicious served alongside black beans and tortillas, or stuffed into a burrito with chicken or carnitas.


NAPA-LIME SLAW
adapted from Bon Appetit

serves 6-8, maybe more

2 Tablespoons olive oil
1/4 cup fresh lime juice (or to taste)
1 head Napa cabbage, shredded (about 8 cups)
4 green onions, thinly sliced
6-8 mild radishes, thinly sliced
2/3 cup chopped fresh cilantro
1 cup crumbled queso fresco or feta (optional)
sea salt to taste

Whisk olive oil and lime juice together in the bottom of a large bowl.  Add cabbage, green onions, radishes and cilantro, and toss to coat.  Season with salt, and sprinkle with cheese, if using.  Can be made a few hours ahead and chilled.
