Avocado-Cucumber Salad

Another cool, simple, refreshing salad to serve alongside your summer grill fare.  If you're up for it, I highly recommend making your own mayo; it's really not that hard, really it's not, and the result is breathtakingly superior to store-bought.


AVOCADO-CUCUMBER SALAD

serves 2 a lot or 4 a little


2 cucumbers, seeded and chopped into chunks
a small bunch of chives, chopped
1 large avocado, pitted and diced
2 tablespoons mayonnaise (try making your own!)
juice of half a lime, plus more to taste
salt and hot sauce (such as Tabasco or Sriracha) to taste
chopped cilantro or flat-leaf parsley to garnish

Combine cucumber, chives and avocado in a bowl. Whisk together mayo, lime and seasonings, adjusting levels to taste. Drizzle salad with dressing and garnish with cilantro or parsley.
